Pan Fried Tilapia with Rosemary Quinoa
We eat this regularly. Samantha still puts honey on the quinoa. :rolleyes:
1 to 2 tilapia fillets per person
1 tbsp cajun spice of choice per fillet
1 tbsp olive oil for pan
1 cup quinoa
2 cups water
1 tbsp dried rosemary or to taste
Bring quinoa, water and rosemary to boil, reduce heat and simmer for 20 or so minutes or until germ separates.
In a cast iron skillet, heat oil. Add tilapia. Sear on each side. Sprinke with cajun spice and cook until flaky. Serve over Rosemary Quiona.
